Nutty Nordic: A grain free, Gluten free alternitive to bread.



Our “Nutty Nordic” is an amazing treat for anyone on a low carb diet who is missing something a little bready.

It’s simple to make,

Needs very little measuring,

And it is absolulty gorgeous.

Ingredients

5 eggs

1 table spoon of salt, (sea salt or pink Himalayan are best)

4 table spoons of olive oil or melted butter.

Any mix of Nuts and seeds you like, or have to hand, (enough to fill your baking tin or mould)

A baking tin or mould.

Food processor (optional)

In my last batch, I used, Pecans, Walnuts, Almonds, Sunflower seeds, sesame seeds, Hazelnuts, Pumpkin seeds and a bag of salted Macadamia nuts.  

Step 1

Mix together enough of your nuts and seeds to fill you baking tin or mould. This bread does not rise so you do not need to allow room for it to do so.

If you like your bread a little finer blitz the mixture in a food processor for a few seconds.

Step 2

Mix dry ingredients with Oil/butter, eggs and salt in a bowel with a large spoon.

Put mixture into Tin or Mould.

Step 3

Bake in middle of the oven at 175 degrees for about 50 min. 25 min into the bake time, take the bread out of the tin or mound, turn upside down and finish the bake without the tin or mould.
 

Step 4

After baking leave to cool for about 40 min.

Eat.
